We want to give our team a chance to tell their story, their tradition, their culture—with their homemade recipes that YOU can enjoy!

During the month of August, we will be featuring a traditional recipe from one of our amazing cooks each week. These recipes will not be in the display case, rather PREORDERED for pick up at either restaurant location.
Orders will be placed Sunday-Tuesday for pickups on Thursday and Fridays.
HOW TO PREORDER
Below is a section on each cook, their traditional recipe and an entry form. If you’d like to enjoy preorder any of the dishes, please fill out the order form of the respective dish. You will pay upon pick up of the dish. Each dish will come in a pan that has about 6 portions in it. If you have any questions about ordering or specific dishes, please email Simone@Sassool.com
Iman -
Pickup dates 8/7 and 8/8
Iman is from Lebanon, but immigrated from Syria to NC 12 years ago. She is a mom and has been working full time at Sassool for 6 years. She has chosen to prepare a trio — Chicken & Rice, Molokhiah with Chicken, and Okra with Lamb.

Ingredients for her dishes*
Molokhia with chicken - garlic, cilantro, chicken broth, molokhia, olive oil, bay leaves, cardamom, cloves, onion, butter
Bamia (Okra) with lamb - tomato sauce, garlic, okra, lamb, olive oil.
Chicken and Rice - basmati rice, sweet peas, carrots, spices, chicken, butter, vegetable oil
**Because there is more than one recipe in this week, the Chicken and Rice will be packaged in an aluminum pan, the okra will be in a 16 oz deli container and the molokhiah will be in a 16 oz deli container. Each of these items will be approximately 6 portions.
Her Inspiration
Molokhia is her favorite dish while her family loves the okra. Rice is a staple in the Lebanese diet and they eat it everyday with either lamb or rice or chicken. She felt this combo was a perfect example of a traditional Lebanese meal.
Fayzeh
Pick up Dates 8-14 and 8-15
Fayzeh is from Jordan and immigrated to the US in 1989 from Jordan. She is a mom of two boys and one girl, and has been working at Sassool since 2012. Follow her on TikTok and Facebook @ChefFOFO. She has chosen to prepare Lamb Mansef.

Ingredients for her dish
Jordanian Mansef - Egyptian rice, salt, vegetable oil, dried yogurt, cream cheese, yogurt, liquid yogurt, Lamb shoulder. turmeric, pine nuts and almonds.
Her Inspiration
Mansef is a traditional Jordanian dish, and wants to share some of her culture with the Sassool patrons. Mansef is a big winner in her household, frequently getting requests from her kids to prepare it.
Tip for enjoying: The sauce is served on the side but poured over the dish once you are ready to eat it.
Aida
Pick up Dates 8-21 and 8-22
Aida is from Iraq, but immigrated to the US in 2015 from Lebanon. Mom of 3 children, has been working at Sassool since 2018. She has chosen to prepare Chicken Biryani.

Iraqi Biryani - Basmati Rice, chicken breast, vermicelli, sweet peas, carrots, potatoes, raisins, seven spice, cumin, cinnamon, cardamom, salt, and pepper, vegetable oil, Maggi bouillon cubes.
Her Inspiration
This is Aida's favorite dish and she makes it at home for her family. It is also a very traditional dish in Iraq.
Selwa
Pick up Dates 8-28 and 8-29
Selwa is from Palestine, and immigrated in 1986 to NC. She has 5 kids, has been working at Sassool since we opened in 2011. Before that she worked for Mounir at Neomonde from 1997 until 2011. She has chosen to prepare Chicken Freekah.

Freekah with Chicken – Freekah (green wheat), chicken, cinnamon, cardamon, coriander, salt, black pepper. almonds, chicken broth, olive oil.le oil, Maggi bouillon cubes.
Her Inspiration
This is a traditional dish in Palestine. Selwa would make it every Friday for her family and is excited to share it with Sassool customers.
